Most kitchens fail not because of the finishes, but because of the logic. This post breaks down zones, ergonomics, the work triangle, dimensions, storage, and accessibility — the principles that separate a well-designed kitchen from a beautiful one that exhausts you.

When I sketch kitchen layouts, I always start with the same question: what is this kitchen actually being asked to do? A kitchen is a production space. It has inputs, processes, and outputs. Understanding that logic — before choosing a cabinet finish or a tap — is what determines whether the space will serve the person using it.

The diagrams in this series walk through every layer of that logic: functional zones, the work triangle, standard dimensions, ergonomic storage, sink and hob placement, and finally — often overlooked — universal accessibility.

Let's go through each one.




01 — ZONES

The Five Zones of a Kitchen

The first diagram shows the kitchen as five distinct functional zones, each colour-coded and each with a clear purpose. Getting these zones right — and placing them in a logical sequence — is the foundation of every kitchen layout, regardless of size or shape.

  • Consumables — Dry goods, pantry items, items used frequently. Typically near the entry point of the kitchen so shopping can be quickly unpacked.

  • Non-Consumables — Pots, pans, utensils, baking trays. Stored near where they are used, ideally adjacent to the cooking zone.

  • Cleaning — The sink, dishwasher, drying rack, and cleaning products. This zone should be clearly separated from food preparation to avoid cross-contamination.

  • Preparation — Countertop workspace for chopping, mixing, and plating. Needs to sit between the consumables zone and the cooking zone for logical flow.

  • Cooking — The hob, oven, and microwave. Needs adequate clearance, ventilation above, and landing space on either side for hot pans.

The ideal flow moves left to right (or right to left): consumables → preparation → cooking → cleaning. When these zones are placed out of sequence, every meal preparation becomes an inefficient back-and-forth across the kitchen.

02 — DIMENSIONS

Getting the Dimensions Right

The second diagram shows an L-shaped kitchen layout with key dimensions annotated in both metric and imperial. These are not arbitrary numbers — they come from decades of ergonomic research into how people actually move, reach, and work in a kitchen.

Notice the L-shape places the refrigerator at the corner junction — this is intentional. It creates a natural landing zone between the cold storage and the preparation run, minimising the distance between retrieving ingredients and starting to work with them.

From the section sketch: counter depth runs 508mm, the overall section through base unit and counter reads 1066mm (3'-6") to 1147mm (3'-8"), and the full floor-to-overhead-unit depth is 1230mm (4'-0"). These numbers define the ergonomic envelope of the kitchen.

03 — THE WORK TRIANGLE

The Triangle That Defines Efficiency

The kitchen work triangle is one of the most enduring concepts in spatial planning. The three points — refrigerator, sink, and hob — define the core working zone of the kitchen. Every meal follows a path between these three points: retrieve → wash/prep → cook.

The work triangle: each side should measure between 1220mm – 2740mm (4'–9'). The total perimeter should not exceed 8000mm.

Each leg of the triangle should be between 1220mm and 2740mm (4' – 9'). If any leg is too short, the cook feels cramped. If too long, the kitchen becomes exhausting. The total perimeter of the triangle should not exceed 8000mm.

In open-plan layouts, kitchen islands often sit within or adjacent to the work triangle, providing a secondary preparation surface without disrupting the core flow between the three primary appliances.

04 — CIRCULATION & OBSTACLES

Planning Around What's Already There

Real kitchens rarely come as blank boxes. The obstacles diagram shows how to identify and plan around fixed elements — structural columns, service ducts, existing openings — that cannot be moved.

The key clearances to note from the sketch are:

2' minimum — aisle clearance (one person)4' minimum — aisle clearance (two people)

A kitchen aisle of less than 2 feet (610mm) is non-functional — you cannot open a base cabinet door without stepping back. For two people working simultaneously, 4 feet (1220mm) is the recommended minimum. Obstacle locations should be checked against these clearances before finalising any layout.

05 — ERGONOMICS

Shelving That Doesn't Punish You

Of all the ergonomic decisions in kitchen design, storage is the most frequently mishandled. The diagram compares two approaches side by side, and the difference is stark.

✗ STANDARD FIXED SHELVING

Items at the back of deep base cabinets require full crouching or kneeling to access. Heavier items become difficult and dangerous to retrieve. Visibility into the cabinet is poor.

✓ PULL-OUT SHELVING

The entire cabinet contents slide out to a comfortable standing position. Easy access to back items, quick to open, far less physical strain — especially important for people with limited mobility.

This is not just a comfort preference. For older adults, pregnant users, or anyone with joint issues, fixed deep shelving can genuinely prevent someone from using large portions of their own kitchen.

Specify pull-out baskets or full-extension drawers in all base units wherever possible. The cost difference over fixed shelving is minimal at the specification stage but transformative in daily use. Prioritise pull-outs for the zone between 0 and 450mm above floor level — the hardest area to reach with fixed shelving.

06 — SINK & SURFACES

The Cleaning Zone in Detail


Sink types — topmount / drop-in installation detail

The sink sketch addresses installation type — specifically the difference between a topmount (drop-in) sink and an undermount approach. This matters more than it seems.

Topmount / Drop-in

A hole is cut in the worktop, and the sink drops in from above, with its rim sitting on top of the worktop surface. Easier and cheaper to install, and can be retrofitted into almost any worktop material. The rim ledge, however, traps debris and requires regular cleaning.

Undermount

The basin sits below the worktop, sealed from underneath. The worktop surface continues uninterrupted to the sink edge — crumbs and water wipe directly into the basin. Requires a solid worktop material (stone, solid surface) and more precise installation, but delivers a cleaner, more hygienic surface in the long run.

Position the sink adjacent to or facing a window wherever the layout allows. It is the most used fixed point in the kitchen, and natural light at the sink dramatically improves the experience of daily tasks like washing up, food preparation, and monitoring children in an adjacent space.

The cleaning zone elevation sketch breaks down each element in order. The integration of the knife rack and chopping board immediately adjacent to the sink and preparation zone is not decorative — it keeps the most-used prep tools within one step of both the tap and the cooking zone.

  • Washing-up utensils at sink height

07 — HOB & EXTRACTION

The Cooking Zone and Its Overhead Logic

The cooking zone centres on the hob, but the extractor above it is often treated as an afterthought. The sketch makes the relationship between the two explicit.

Standard hob cutout dimensions and extractor positioning follow manufacturer specifications closely — the 12.5mm measurement noted in the sketch refers to the worktop edge detail at the cutout, which determines the visible margin between hob and worktop surface. Too tight and the hob feels recessed; too wide and the gap collects grease.

The extractor should be positioned 650mm–750mm above the hob surface for gas hobs, and 550mm–650mm for induction or electric. Lower than this and the heat sensor cuts out prematurely; higher and extraction becomes inefficient. This range is commonly ignored in fitted kitchen specifications and is worth checking explicitly on site.

08 — UNIVERSAL DESIGN

The Accessible Kitchen Is the Better Kitchen

The most detailed sketch in the set is the accessible kitchen layout — and it is also the most important. The principles of universal design do not make a kitchen less functional for able-bodied users. They make it more functional for everyone.

Key features from the sketch

  • Adjustable worktop height with plinth rod

  • Adjustable layers on pull-out units

  • Pull-out microwave with fold-up/open door

  • Continuous worktop — unbroken preparation surface

  • Sink positioned to allow approach from front or side

  • Shallow base units — accessible without bending deep

  • Seasonal items on open shelves at reachable height

  • Long-term storage in overhead units (adapted access)

  • Wall telephone / emergency call point

  • Clearly separated waste and recycling area

  • Kitchen herbs at accessible windowsill level

The continuous worktop is the single most practical accessible feature — it allows heavy items (mixing bowls, cast-iron pans, groceries) to be slid rather than lifted between the sink, preparation zone, and hob. This benefits users of any age or ability, and costs nothing to specify.

The adjustable worktop — typically operated via a motor or manual crank with a plinth rod — allows the working surface to shift between a standard standing height and a lower position for seated work or for users of different statures. In a family kitchen, this single intervention can make the space genuinely usable by everyone in the household.

When the person using a kitchen cannot be predicted — rental property, family home, shared housing, care facility — design to the most demanding user first. An accessible kitchen is a better kitchen for everyone. A standard kitchen is sometimes a kitchen for no one.

CLOSING

A Kitchen Is a System

Every principle in this post connects to the same underlying idea: a kitchen is a production system, and every design decision either serves or disrupts the logic of that system. Zones determine sequence. Dimensions determine comfort. The work triangle determines efficiency. Storage determines whether the space is actually usable on a tired Tuesday evening.

None of these principles are in conflict with beautiful design. In fact, the kitchens that feel effortless to photograph are usually the same ones that feel effortless to cook in — because the logic underneath them is sound.
